Sadly we must say "farewell" to Havelock Farmers' Market! It was decided in late March 2011 that Havelock Farmers' Market will no longer exists! We will miss you terribly, but all is not lost... this website will stand as a way for our customers to get back in contact with us. The market might be gone, but the vendors are still very much alive and still can be found at many Lincoln farmers' markets and surrounding areas. Mash Potatoes and Green Onions
2 pounds potatoes
1/2 cup of heavy whipping cream
1/2 stick butter
1 bunch green onions
Salt and pepper to taste
Peel and cut potatoes into 1 inch pieces. Cook on top of stove in boiling water until tender for about 15 minutes. While potatoes cook, put butter and cream in a heavy pan and heat to simmer over medium heat, stirring often to prevent scorching or burning. Wash and chop the green onions, using white and green tops. Mix into the hot liquid mixture. Drain potatoes and return to the same pan. Mash; add liquid mixture and stir to blend. Salt and pepper to taste and serve hot.
